Masala Dosa Recipe is a very renowned recipe in all of the dosa varieties. Though it is an Indian food, it can be found in all other parts of the Asia. A Masala Dosa is made by stuffing a dosa with lightly cooked potato, onions, green chili and spices which can be served with chutneys and sambar. It is listed as number 49 on World’s 50 most delicious food complied by CNN in 2011.
Today we will have a lesson how to make masala dosa with potato filling.
How to make masala dosa with potato filling:
Actually, masala dosa is a stuffed dosa. There are two parts: the dosa and the stuffing. The dosa is made by parboiled rice and lentils. The stuffing is made from potatoes, methi, curry leaves, green chili, tomatoes etc. At first, you have to collect all the ingredients properly. Then you may start to prepare the dish.
Ingredients required for masala dosa battering:
- Parboiled rice- 1 and ½ cup
- Raw rice- ½ cup
- Whole urad dal- ½ cup
- Fenugreek Seeds- ½ tsp
- Channa dal- 2 tbsp
- Tur dal- 1 ½ tbsp.
- Salt needed
- Oil needed
Ingredients required for the filling for masala dosa:
- Potatoes- 500 gms boiled and mashed
- Onion – 2 cup sliced thinly
- Ginger – 1-inch piece
- Green chili – 2-3 (nicely chopped)
- Tomato- 1 (optional)
- Turmeric powder – ¼ tsp
- Curry leaves- few tender
- Salt needed
- Oil- 2 tsp
- Mustard- 1 tsp
- Asafoetida – a pinch
Method of making masala dosa batter:
In enough water soak parboiled rice, raw rice, urad dal, fenugreek dal, channa dal, tur dal for 4-5 hours.
Wash everything together and then grind everything to a together to a smooth texture adding water. You may use the wet grinder for grinding. Add salt needed and leave it overnight. Fermenting time varies according to the climate conditions. Before making dosa add, add 1 tsp of sugar, little and mix well to get the dosa batter consistently. The batter is ready to make masala dosa.
Now we will learn how to make filling for masala dosa.
Preparation for masala dosa filling:
Wash the potatoes properly and then cut them in the half. Pressure cook for 3 whistles. After cooling down the boiled potatoes, peel the skin and mash it well.
Cut onions, nicely chop green chilies and ginger.
Add mustard seeds , asafoetida, urad dal and channa dal in hot oil.
When dal turns golden brown, add thinly sliced onions, green chili, ginger and curry leaves. Wait for a minute until the onion turns pink.
Add tomatoes, turmeric powder and salt needed.
After that, add ½ cup hot water. When water starts boiling, add the mashed potatoes. Mix it well and cook for 5-6 minutes. Do not add too much water, then the dosa will be humid.
Switch off the burner and see your filling for the masala dosa is ready.
Preparation of masala dosa:
Now we will make the masala dosa. Heat a non-stick or iron tawa, add a little drop of oil and then rub half onion on it.
Pour a ladle of batter in the center of hot tawa. Spread the batter in a circular motion by using the back of the ladle. Add a tsp of oil around the dosa and cover it with a lid.
Once the edges started to become brown and the dosa is cooked , reduce the heat. Add 2-3 tbsp of potato masala and fold the dosa. Then remove it from tawa. Masala dosa is ready and serve it hot from tawa.
Decoration and serve:
Masala dosa can be folded into half or as triangle. Serve with chutney and sambar.
